Scholar Patch Cupcakes: Bring GPMN School Spirit Home With This Recipe

For anyone with a sweet tooth and a love for snacks on the sour side, this recipe for Around the World Lemon Scholar Patch Cupcakes could be a wonderful solution.

With this recipe, it’s possible to satisfy a craving for something sugary. Using this recipe is also a great way to show off school spirit because the Sour Patch Kids can represent the amazing group of scholars at Gem Prep Meridian North.



Ingredients:

Large bag of Sour Patch Kids

3 cups self-rising flour

½ teaspoon salt

1 cup room temperature unsalted butter

2 cups sugar

4 room temperature eggs

1 teaspoon vanilla extract

2 tablespoons lemon zest

1 cup divided whole milk

2 ½ tablespoons divided lemon juice


Instructions:

Step 1: Preheat the oven to 375 degrees Fahrenheit.

Step 2: Line cupcake pans with liners until 30 liners are placed in the cups

Step 3: Sift the salt and the rising flour in a bowl.

Step 4: Use a different bowl and an electric mixer to beat the sugar and butter until the mixture is light and fluffy. The eggs should be beat in one at a time. Then, add the lemon zest and vanilla extract to this bowl and mix.

Step 5: Going one-third at a time, beat the flour and salt mixture into the bowl with the beaten butter, eggs, and sugar. Alternate with half of the milk and half of the lemon juice after the first ⅔ of flour is in. Beat this mixture until it’s combined. Be careful not to overmix.

Step 6: Fill the liners with the batter until they are ¾ of the way full. Bake for about 17 minutes or when a toothpick can be inserted and come out clean.

Step 7: Allow the cupcakes to cool for ten minutes, then take them out and let them cool on a cooling rack.

Step 8: Separate the blue and green Sour Patch Kids (and it’s hard, but don’t eat them)

Step 9: Melt the colors in different pots on low until gooey.

Step 10: Make the blue into a circle and let cool. This is the water for the “world.”

Step 11: Melt the green on low again. Once the blue is cooled and hardened, put the green onto the blue drop by drop. Let cool. This creates the land of the “world.”

Step 12: Once hardened, put a small bit of the melted Sour Patch Kids on the bottom of the candy world to make it stay on the cupcake. Put some on the bottom of the leftover Sour Patch Kids and put some on the side of the cupcakes.

Step 13: Eat, enjoy, love
